Simple, Sweet and Savory

My favorite recipes always have these three things:
1- They are super simple
2- I can make a bunch and eat it for a few days
3- I have the ingredients already on hand

This recipe not only checked off all three boxes they are DELICIOUS to boot! You’ll also get a hearty dose of antioxidants, protein and healthy fats, checking off my fourth box of real whole food nutrition.
I like to think by now the photo is making your mouth water enough you are ready to give these a try 🙂


1 pound sweet potatoes- peeled and shredded

half a bunch of scallions diced small-white and green parts

3 eggs beaten

1/8 tsp cayenne pepper

1 tsp salt

1/4 cup flour (any kind you have, I used garbanzo bean flour)

coconut oil for frying

mix everything together (except the oil) and fry like pancakes (about 3-4 minutes each side). Keep pancakes on a baking sheet in the oven (set at 200) while you fry them all up.

There are many ways to enjoy these but here are a few ways I like to eat them:

*a side dish to any meal

*reheated for breakfast with some apple sauce and sour cream on top

*dipped in soup instead of toasted bread

*a quick snack after the gym or workout

*sandwiching a burger instead of a bun
