Friendly Fat.

Folks, I’m about to tell you all something that is going to make you love me.

We need to eat more fat. Lots and lots of good quality saturated fat.

The kind of fat that’s gone missing since the 1950’s when we saw a decline in traditional cooking and a rise in processed “food like” garbage.

Here’s the skinny on fat 😉

Our bodies NEED saturated fat to thrive. It’s the building blocks for healthy cellular and hormone function. Fats from animal and vegetable sources provide our body with energy to last a long time. It gets absorbed in our body at a slow and steady rate keeping us feeling full longer so ultimately we eat less. Saturated fat also plays a vital role in vitamin and mineral absorption.

Eat more fat. I’m not kidding.

The danger with all that non-fat and low fat crap in the grocery store is that it’s loaded with processed sugar and other chemical stabilizers. Within an hour of eating it we feel hungry again and need to eat more. We think we’re being healthy because we’ve been told fat is bad for us. What we’re really doing is filling our bodies with more and more sugar. Guess what all that sugar is doing to us? Making us fat and sick.

What’s the alternative? Eat more good quality saturated fat. Notice how I keep saying “good quality” and “saturated”.  I want you to remember the next time you go shopping that all fat is not created equal. Margarine is not the same as butter. Canola oil is not the same as coconut oil. Why? Margarine is a chemical and butter is real food. Canola oil is processed chemically and rancid and coconut oil is real food. Basically if our Great-grandparents wouldn’t recognize it as food than neither should we.

So how can you start incorporating more good quality saturated fat into your diet? Here are a few of my favorite ways to layer on the fat:

* 2 Tbl of full fat butter or coconut oil in your morning oatmeal

* Eat full fat plain yogurt, add fresh fruit, pumpkin or sunflower seeds or a bit of raw honey

* Use full fat coconut milk when making vegetable curries

* Fry up some bacon for a spinach salad and then save the fat (that’s what’s in the jar in the above photo)! Keep it in a glass jar in the fridge and use it to pan fry eggs, veggies, blend it into mashed potatoes… the uses are endless.

* Make your own salad dressing using cold pressed virgin olive oil or sesame oil

* Use your slow cooker to make brisket, pulled pork, spare ribs

* Roast a chicken and then use the carcass to make bone broth

Make sure your meat and dairy are coming from humanely raised and pastured animals from family farms. The more local the better! If you’re in Los Angeles this is a great source for the best quality around.

So enjoy that buttered toast and that thick cut bacon!  Just please, put down the haagen dazs, Doritos and Snickers bars. Your body will thank you.

Is bacon really considered a source of good fat? Even if you have high cholesterol?

    Hi Shannon, Sorry it’s taken me so long to respond to this question! The short answer is yes. Bacon and bacon fat when eaten in moderation is a very healthy fat. With all animal fats and protein quality and quantity is key. You want your meat to come from pastured raised and humanely treated animals. The trouble comes when people eat meat from animals that have been treated very poorly, been fed GMO garbage food and kept in very close disease ridden quarters. These animals are often sick and give antibiotics which we then consume. Animals that were allowed to roam freely eating all different kinds of wild and naturally growing grasses and were also fed organic grain feeds are happy and healthy and so is the meat you are getting. There are fats in animal meat that actually lower LDL (bad) cholesterol while also increasing HDL (good) cholesterol when the meat you are getting is of the best quality. The other important element is quantity. If the majority of your meal is vegetables, legumes and whole grains than your good to go! When weighing the pros and cons of cooking oil frying something in bacon fat is a lot healthier for your body than rancid GMO canola oil.
