Crockpot Chicken

Dayvacare Vermont vacation is officially over and we are all back to life as we know it here in LA.

Any time I come back from vacation there always seems to be an adjustment period.  I’m often left feeling a bit blah or overwhelmed. Does this ever happen to you? I call it, “re-entry is kind of a bitch”.

One thing that really helps to get me back in the swing of things is creating my meal plan for the days ahead. This ensures we wont be getting take out every night for the first week back.. Maybe just the first night 😉

Since there is still unpacking and laundry to do I’m sticking with family favorites and kitchen staples. Nothing fancy or complicated, requiring time, energy and more than 4 ingredients. After vacation I want easy-peasy as we sort through a month of mail and getting baby familiar with sleeping in his own bed again.

Roast Chicken is perfect for times exactly like this. However, it’s hotter than Hades right now so instead of turning my oven on I’m throwing my whole chicken in the slow cooker and heading to a friends pool.

By dinner time my family and I will be able to sit down to a home cooked meal with maybe 10 minutes spent in the kitchen.

Recipe for crockpot chicken:

1 4 lb chickn

1 onion

3 potatoes

1 lemon

some kind of spice rub- I used coriander, salt and parsley


slice the onion and layer it on the bottom of the crock pot, then dice the potatoes in about 1-2inch pieces and layer those on top of the onion. Rinse and pat dry the chicken and rub it inside and out with the spices. Cut the lemon in a few pieces and stuff them inside the bird. Put the chicken in the crock pot and cook on high for about 5-6 hrs. If you like the skin to be crispy put the chicken in the broiler for a few minutes after you remove it from the crock pot.
