Burger time!

There are lots of recipes online for variations of this turkey burger but at the risk of bragging I think mine is kinda the best of the best 🙂

The other day when the baby was napping I prepped the meat and the peanut sauce and kept them in the fridge. After the baby went to bed that evening I was able to whip this dinner up in 20 min. Basically the time it took to cook the burgers. After the first bite everyone said it was AMAZING. That is some serious kitchen magic in my book.

To kick up the nutrient density of this meal try using lettuce leaves, swiss chard, collard greens or kale instead of a regular bun.

I pan fried my burgers in bacon fat, you could also try grilling them however I’m not promising they wont stick to the grill.

Thai turkey burger recipe: makes 3 large burgers or 4 small ones

1 lb pasture raised organic ground turkey

3 Tbl diced fresh ginger (peeled of course)

1/2 cup diced cilantro

1/4 cup diced scallions (white and green parts)

1 tsp sea salt

Mix it all up with your hands and form into patties

Peanut sauce dressing:

3 Tbl organic peanut butter

1 Tbl apple cider vinegar

1 Tbl toasted sesame oil

Juice from one lime

1 tsp gluten free tamari

1 1/2 tsp crushed red pepper (optional)

1 pinch sea salt

combine everything and mix well. Serve on burgers.
