5 Days 5 Ways!

A post I saw on Instagram inspired this post. The challenge was to take on article of clothing and post pictures of yourself wearing it 5 days in a row in 5 different ways. I absolutely love this for so many reasons. It keeps getting ready in the morning quick and simple, inspires fashion creativity and helps something you may be getting sick of stay new and fresh everyday. That is a win/win for me. I decided that would be a great food challenge as well.

We always have prepped food and leftovers at this house but sometimes I get bored of eating the same thing. I imagine some of you do too. So the challenge is to take one ingredient big or small and use it to create your mealtime masterpiece for 5 days in a row.

Here is an example: Quinoa (You made a big pot of it on Sunday night, now what?) Monday breakfast- plain yogurt, sliced banana, quinoa, and cinnamon. BAM! A quick and delicious breakfast packed with protein

Tuesday lunch- quinoa, garbanzo beans, kale and apple salad with a dressing made of apple cider vinegar, fresh squeezed lemon, sesame oil and sea salt. (I promise you will have energy and not feel bloated after this meal!)


Wednesday dinner- deconstructed fish tacos- pan seared fish of your liking, black beans, diced onions, tomatoes and cilantro with a squeeze of lime over a bed of.. You guessed it, quinoa!

Thursday lunch- sautéed swiss chard with garlic and sliced almonds tossed with a little coconut oil, sea salt and quinoa (we’re getting there and so far I am not sick of quinoa!)

Friday breakfast- scrambled eggs, quinoa and diced tomatoes on a corn tortilla with a little sharp cheddar- we did it! Now come Saturday morning those blueberry pancakes with real maple syrup will taste even better 🙂
